Rosemary-Flavored Pork Fat

Well, as most of you have figured this blog is posted each weekend. But I thought that I might post a few items related to our efforts at self-sufficiency…mainly recipes, during the week from time to time.

Rosemary-Flavored Pork Fat:

½ cup lard, 2 sprigs of rosemary, 1/8 teaspoon of sea salt

Combine the lard, rosemary and salt in a small sauce pan. Bring it slowly to a simmer over low heat and then let the fat sizzle for 15 minutes to dissolve the salt.

Set aside and remove the rosemary sprigs. Pour into a bowl. Wait until it begins to turn white.

Use a wooden spoon to beat the fat until it is creamy and light. Adjust the seasoning and store in the fridge. Use in place of butter. Holy smoke!
