Beef
Ours is a small-farm enterprise. We intentionally raise a limited number of cattle each year so that we can maintain not only the quality of the animals but also the quality of the land they graze. When we say they are grassfed, we mean it. They receive no grain, no maintenance antibiotics, no hormones, and no chemicals.

Growing beef on grass to full maturity is a bygone tradition. The practice has been replaced by feeding an all-corn diet until the cattle are a year and a half old. The benefit of feeding cattle out on corn, in a feedlot, is faster weight gain—which, of course, means quicker turnaround and quicker profit. The liabilities are too many to list, but for a well-written and -researched account of typical commercial meat production, read The Omnivore’s Dilemma by Michael Pollan.

The benefits of pastured production and the consequent slower growth are a happier, healthier cow and meat that is well muscled and marbled and great tasting.



Hogs

Whether they're Berkshire, Tamworth, another heritage breed, or crosses, our feeder pigs are raised in a similar tradition to hogs grown in the South 100 years ago. They live outdoors, in paddocks and in the woods, and their diet is supplemented with nature’s fare: bugs, worms, nuts. They do not live in tight confinement or on concrete floors, and they do not wear nose rings to keep them from digging.

We raise our pigs the way we do not only because it is more humane, but also because it produces a healthier, better muscled, more flavorful meat.

Lamb
We finish a small number of yearling meat lambs each year. They are grown out exclusively on pasture.

Poultry
We have raised speckled Sussex chickens for 10 years and occasionally have available for sale chicks and breeding stock. The Sussex is a striking and hardy bird originally from England. The breed produces a good-size, white-skinned carcass and medium-brown eggs. We love our Sussex flock. The hens are good layers and retain the setting instinct. The females are docile, the roosters are typically not aggressive, and the chicks are beautifully marked.
